Ok, one more quick one idea for how to to multiple strikes on an opportunity attack. Time time, let’s write something for the monk.
When you make an opportunity attack, you can spend 1 ki point to make two unarmed strikes instead of one following the rules for two-weapon fighting.

You can spend 1 ki point after you make an strike that hits to attempt to break a foes weapons, hands, or claws. The attacked creature must make a Strength saving throw or take a -2 penalty to one of its weapons. A creature may only be under one of this effect at a time. The creature can have its weapon repaired normally, through the use of a mending spell, or in the case of natural weapon have a healing spell cast upon it. A foe can pick up an identical copy of this weapon and be free of this penalty as well.

As a free action, you can spend 1 ki point change the damage type of your unarmed attacks to acid, cold, lightning, fire, necrotic, poison, or thunder for the turn. Your attack still counts as bludgeoning in addition in addition to its added damage type.

How about this ki feature
You can spend 1 ki point to double your proficiency bonus to Charisma(performance), Dexterity(acrobatics), Dexterity(stealth), Strength(athletics), Wisdom(perception), and Wisdom(survival) checks for one check or one turn, whichever is longer .
